These Chocolate Peanut Butter Frozen Greek yogurt Bites are cold, creamy and sweet. The perfect post-meal sweet treat!

I am a big fan of the post-meal sweet treat, and I know you probably are too. As a dietitian who follows a balanced approach to nutrition, I believe in that there is room for sweet treats in a healthy diet. Sometimes that sweet treat is a fudgy brownie, and sometimes it's a handful of berries. But most days of the week, I just need a small bite of something sweet, and that's where these frozen Greek yogurt bites come in.

Ingredients
Banana. For our source of sweetness, we use one whole banana! The banana helps soften the yogurt when frozen, making these bites easier to eat straight out of the freezer. If you aren’t a huge banana fan, you can replace it with 2 tbsp- ¼ cup of honey or maple syrup.
Greek yogurt. I typically use plain greek yogurt, but vanilla yogurt is an amazing option as well. Please note the higher the fat percentage of the yogurt, the creamier the frozen Greek yogurt bites will be.
Peanut butter. For a creamy consistency and flavour! I typically use natural peanut butter.
Chopped nuts (optional). For a little crunch, I use some chopped unsalted peanuts.
Chocolate chips. There's no better combination than chocolate and peanut butter. I recommend dark chocolate chips!
Coconut oil. This helps melt the chocolate chips and harden it into a nice, crisp chocolate coating.

Instructions
- In a medium mixing bowl add banana, and mash using a fork or potato masher. Once mashed, add Greek yogurt, vanilla extract, peanut butter,and chopped peanuts (if using). Mix to combine.
- In a small bowl add chocolate chips and coconut oil. Microwave in increments of 30 seconds, stirring between until the chocolate is fully melted (you may also use a double boiler to melt chocolate).
- Once the chocolate is melted, pour about 1 teaspoon of chocolate into the silicone ice cube tray, use a spoon to gently press the melted chocolate along the walls of the tray. Once all walls are covered, place the tray in the freezer for about 5 minutes until the chocolate has set.
- Once the chocolate has set, fill each mould with the peanut butter yogurt filling (about 2 tablespoon in each- depending on the size of your tray).
- Drizzle the tops of the filing with a layer of melted chocolate (about 1 tsp) - it should be thin enough to spread however if needed you may gently smooth it out using a spoon. (ensure the chocolate is still fluid before pouring as you do not want it to be too thick). Freeze for about 2 hours.
- Store in the freezer and enjoy straight out of the freezer (I recommend allowing to thaw for about 2-5 minutes on the counter before eating).
Substitutions and Variations
To make gluten-free: this recipe is naturally gluten-free.
To make dairy-free: use a dairy-free yogurt of choice.
To make nut-free: swap the peanut butter for sunflower seed butter or tahini.
If you don't like banana, you can use 2 tbsp- ¼ cup of honey or maple syrup (depending on how sweet you like them).
Get creative with the flavours! Add some cinnamon, or protein powder to the yogurt to change the flavours.

Storage
I recommend storing these in the freezer for an easy sweet treat! When you are ready to eat them, I like to place one on a plate on the counter for about 2-5 minutes just to allow it to soften slightly.
Top Tips for Success
Silicone ice cube trays or muffin liners are a must for easy removal. I recommend getting deeper ones if possible, as this will create larger frozen Greek yogurt bites.
The type of Greek yogurt will also affect how creamy these yogurt bites are. For example, a higher fat such as 5% will result in a less icy consistency.

The texture of these all comes down to the Greek yogurt. Using a higher fat variation of yogurt such as 5% results in a creamier and less ice-y consistency.
Unfortunately no. I recommend keeping them frozen for best results. In the fridge, they will become too soft.
