    Easy Blended Chocolate Chip Cookie Baked Oats

    If your looking for a way to have cake for breakfast... you've found it. These easy blended chocolate chip cookie baked oats are light, fluffy and the best cross between a chocolate chip cookie and your favourite cake. PLUS they can be vegan, gluten free AND they only take 30 minutes (total).

    Not to toot my own horn but I was blending my baked oats before they were trendy. I first discovered 'oat cakes' about 2 years ago. Since then blended baked oats have gone CRAZY viral on Tiktok! Last winter, every single person had some variation of their favourite blended oats. I still have to say these easy blended chocolate chip cookie baked oats are the best.

    They're light, fluffy, super easy to make AND they are the perfect way to have dessert for breakfast. Don't believe me/ Try them for yourself!

    Why blend your baked oats?

    What's wrong with normal baked oats? Absolutely nothing.

    As a lover of oats of all kind, I do not discriminate against what form my oats are in. Normal baked oats made by combining, milk, baking powder, oats, eggs and whatever flavour you choose are the classic way to make baked oats. They are great if you are looking for a blender free baked oats option or a super easy breakfast (with minimal mess). You can make them single serving OR you can make them in a big batch.

    Big batch baked oats are perfect for meal prepping, or are the perfect option when you need an easy, one pan meal for a group of people. Whereas single serving baked oats are great if you don't feel like sharing.

    So as you can see, there is absolutely nothing wrong with normal, classic baked oats. The only difference between classic baked oats and blended baked oats is in the title- one you blend! Other than that the ingredients are the exact same. Which is why if you would rather a classic chocolate chip cookie baked oat recipe just skip the blending and continue to follow this recipe as written! They will still turn out great.

    I personally love blended baked oats because I enjoy having cake for breakfast. When you blend the ingredients and bake them you get this light, fluffy consistency VERY similar to cake. Which is why blended baked oats are so great for people who want to start eating oatmeal but don't typically enjoy the texture of oats. Blending your oats allows you to keep all the nutrients of oatmeal- including lots of fibre, while making it feel like you're having dessert. Plus it's really only one added step- It's really a win-win in my books.

    What ingredients do I need to make blended chocolate chip cookie baked oats?

    Oats– duh! you can’t make baked oats without oats! I like to use minute oats but really any type of rolled or quick oats will work!

    Banana- This recipe uses ½ of a medium banana for some sweetness without added sugar. Unsweetened applesauce is also a great addition if you don’t like bananas! See the note section of the recipe for this substitution.

    Egg- For the FLUFFIEST blended chocolate chip cookie baked oats EVER. I have tried to make these using a flax egg as a vegan substitute, and they did work but they weren't quite as fluffy (see below).

    Vanilla extract- my very favourite flavour. I will add vanilla extract to absolutely anything. As you are baking these blended oats, feel free to use artificial vanilla extract to save some money as you are baking it off anyways!

    Baking powder- FLUFF factor. Baking powder helps these baked oats rise (no baking soda is not the same)!

    Maple syrup- A touch of natural sweetener! I have not tried making these easy blended chocolate chip cookie baked oats with any other sweetener, however I'm sure honey would work!

    Peanut butter- I truly just love peanut butter. If you do not wish to use peanut butter feel free to substitute with any nut/ seed butter or ever coconut oil! The purpose of the peanut butter is just to help create a more moist consistency!

    Chocolate chips- you can't have chocolate chip cookie baked oats without chocolate chips! For a non-dairy substitute try these Enjoy Life chocolate chips!

    Banana- I use banana in all of my baked oat recipes. I love the moist texture it brings, while also adding in some potassium, vitamin C and natural sweetness. HOWEVER the most popular question I get is what is a substitute- ½ cup of applesauce will work perfectly in these!

    High-powered blender- Obviously a blender is not an ingredient BUT I love my Vitamix and will find every excuse possible to promote it to everyone I know. This blender is amazing, it truly does it all and is my secret weapon to making the best sauces and blended baked oats PLUS it's currently on sale.

    Blended Chocolate Chip Cookie Baked Oats

    Ingredients 

    • ½ cup oats quick, minute or rolled all work!
    • 1 medium egg or flax egg, see note below
    • ½ teaspoon baking powder
    • 1 teaspoon vanilla extract
    • ½ tablespoon maple syrup
    • ½ of one medium banana see notes below for substitution
    • 1 tablespoon peanut butter
    • ½ teaspoon cinnamon optional
    • 1 small handful chocolate chips

    Instructions

    • Preheat oven to 350°F.
    • In a high powered blender or food processor, combine all ingredients (except chocolate chips) and blend until smooth.
    • Once oats are blended, pour into a greased oven safe ceramic dish or ramekin. Top with chocolate chips (you can also stir them around a bit so they don't all cluster at the top).
    • Bake for about 20-25 minutes or until top of oats begins to brown and a toothpick inserted into the center comes out clean.
    • Pour milk or cream over your oats and enjoy!

    Notes

    Substitutions-
    Egg-> 1 flax egg (combine 1 tablespoon ground flax seed with 3 tablespoon water)
    Banana -> ½ cup unsweetened applesauce
    Peanut butter -> any nut/ seed butter (including coconut oil)

      I added 2 TBS. collagen to up the protein content, I also added a splash of milk . I put mine in the microwave for about A minute and a half and it came out great!

      Hi! Love your recipes and I have tried our other baked oat recipes. Was curious for this one if it’s 1/2 a banana or a full one? It says 1 in the instructions but you mentioned 1/2 in your explanation at the top. Just wanted to make sure I get the proportions right
