Key Lime Pie Overnight Oats are a zesty meal prep breakfast that taste like dessert. High in protein, gluten free and delicious!

My lemon cheesecake overnight oats are one of my most popular dessert-inspired breakfast recipes, but I think it's time to turn some attention to its cousin: the humble lime. I will always love a good, homemade zesty key lime pie, and turns out it's just as delicious in overnight oat form.
These key lime pie overnight oats are light, refreshing and full of tangy lime zest and juice. We start with the classic graham crust on the bottom, add a layer of lime-infused oats, and top it with a creamy yogurt mousse. Why This Recipe Is Dietitian Approved
- Balanced blood sugar. You can enjoy sweet breakfasts without a blood sugar crash! These key lime pie overnight oats have 40g of protein and 8g of fibre, making them an excellent balanced option.
- Dessert for breakfast. We love a non-boring breakfast option that actually motivates you to get up in the morning.
- Switch up the meal prep. You can only eat the same flavour of high protein overnight oats for so many days in a row. Key lime pie needs to be the next flavour in the rotation!
Ingredients
Oats. Rolled or quick oats work best. Minute oats will work as well; they just are smaller so may not thicken quite as well. Steel cut oats will not work, as they are very tough and require cooking.
Chia seeds. I do not recommend skipping the chia seeds; these are a key ingredient to thicken the oats and create a pudding-like consistency. Want to learn more about chia seeds? I have a whole post here.
Vanilla protein powder. Optional, but recommended to give these oats an additional boost of protein for an even more satisfying breakfast. I also find they add a nice sweetness without additional sugar. I personally love the smooth vanilla protein from Nuzest. You can leave the protein powder out if you prefer as well.
Key limes. Essential for the best flavour! Regular limes will work as well, however please be mindful as key limes are typically smaller as less sour.
Milk. You can use any milk or milk alternative of choice. For the highest protein options, I recommend using dairy milk or unsweetened soy milk.
Greek yogurt. This acts as the topping for these key lime pie overnight oats. In this recipe, I use vanilla Greek yogurt for a sweeter flavour (try THIS brand if you are looking for a lower sugar option), however you can also make your own by combining plain Greek yogurt, maple syrup and vanilla extract.
Vanilla extract. For flavour! I recommend using pure natural vanilla extract, but you can skip it if you prefer.
Graham crackers. This is the base for the ‘crust’. I prefer purchasing whole graham crackers and crushing them yourself vs buying pre-crushed graham cracker crumbs. It just tastes better.

Instructions
- In a 10 oz mason jar or glass container, combine graham cracker crumbs and milk. The mixture should be wet enough to stick together but shouldn’t be overly liquidy. Gently press the mixture into the bottom of your mason jar using a spoon to form the crust.
- In a medium bowl, add milk, vanilla extract and lime juice. Whisk until smooth. Add oats, chia seeds and protein powder. Mix well. Pour oat mixture over the graham cracker crust. Cover and place in the fridge to chill for at least 3 hours (ideally overnight).
- Create topping by mixing together vanilla Greek yogurt, honey, and key lime juice and zest.
- In the morning, top with the Greek yogurt topping and garnish with additional lime zest and crushed graham cracker crumbs.
Substitutions and Variations
To make gluten-free: use certified gluten free oats and gluten free graham crackers.
To make dairy-free: use a dairy-free milk, thick dairy-free yogurt and plant-based protein powder.
To make nut-free: this recipe is naturally nut-free.
Missing ingredients? Try these:
- Key limes: regular limes work, but they will be more sour.
- Protein powder: this can be omitted without modifications

Key lime pie overnight oats can be stored in the fridge for up to 5 days in an airtight container.
Top Tips for Success
You can customize these to meet your desired taste preference. The lime with the yogurt can be tart depending on how sweet your yogurt is. If you are finding it is too tart, I recommend adding a bit of honey.
If you would like more lime flavour, add more lime zest.

Okay, I have tried several recipes for overnight oats and I cannot get past the texture. BUT! Key lime is my favorite anything. This recipe was perfect! I think the graham cracker "crust" and additional yogurt topping was delicious. Will definitely try this again!
