    Muffin Tin Pizza Cups (Easy)

    Muffin tin pizza cups are an easy healthy meal prep option. Customize with your favourite pizza toppings for a quick lunch that kids and adults will love.

    I'm all about meal prep options that are grab-and-go, and these pizza cups are my newest obsession. They're perfect for adding to an adult lunchable or even enjoying as a filling snack.

    The best part is that you don't even have to worry about a pizza dough! That's right, we're making this SUPER easy by using tortillas, similar to my air fryer tortilla pizza. My thin crust friends, you'll love this.

    Parents, these pizza cups are also amazing for kids. Add your kids' favourite pizza toppings and keep them in the freezer for fast school lunches. If you're looking for a homemade alternative to frozen pizza or pizza bites, this is a great option. After all, what kid (or adult) doesn't love a cheesy, crispy bite that tastes like pizza?

    1. Customizable. Whether you're vegetarian or always order the meat lover's pizza, this recipe is simple to customize based on your tastes. See the notes below for how to easily make it gluten-free and vegan!
    2. Balanced. I'll always say that pizza is a balanced meal. Carbs from the crust, protein and veggies from your toppings, and fats from the cheese... sounds like we're covering our bases! We can even add fibre by loading up on the veggies and using a whole wheat tortilla.
    3. Meal prep friendly. I love making these in my meal prep to make life easier during the week. You'll thank me later.

    Ingredients

    Ingredients including veggies, pizza sauce, whole wheat tortillas, ground turkey, cheese and pepperoni.
    • Whole wheat tortillas
    • Olive oil
    • Ground turkey
    • Italian seasoning
    • Mozzarella cheese
    • Bell peppers
    • Spinach
    • Pizza sauce
    • Turkey pepperoni

    Instructions

    Preheat oven to 375 F.

    Slicing a tortilla into quarters.

    Slice tortillas into four equal sized quarters. Lightly spray a muffin tin with non-stick cooking spray.

    Layer two tortilla quarters in each cavity of the muffin tin, ensuring the “point” of each triangle is pointing towards the inside of the cavity. Gently press the tortillas down. Bake tortillas for about 5-7 minutes, until they begin to turn golden brown.

    While tortillas are cooking, add oil to a pan over medium-high heat. Once hot, add ground turkey and Italian spice blend. Cook until turkey is no longer pink in colour. Drain any excess oil. Allow to cool.

    To a large mixing bowl, add cooked turkey, 1 cup cheese, diced bell peppers, spinach and marinara sauce. Mix to combine.

    Add about ⅓ cup of the turkey mixture into each tortilla cup. Gently pressing down. Top each cup with the remaining mozzarella cheese and a few slices of pepperoni.

    Bake for about 15 minutes. 

    Substitutions and Variations

    To make gluten-free: Use a gluten-free tortilla.

    To make dairy-free: Use a dairy-free cheese.

    To make vegan: Use a dairy-free cheese and omit the turkey and pepperoni.

    To make nut-free: This recipe is naturally nut-free.

    Missing an ingredient? Try these:

    • Ground turkey: Swap for ground beef or sausage.
    • Pizza sauce: Try another pizza sauce base like BBQ sauce or pesto!
    • Veggies: Use any veggies you have on hand.

    What's your pizza order? Swap up this recipe by adding different toppings:

    • Hawaiian: Add diced pineapples and ham.
    • Taco: Swap the pizza sauce for salsa. Add jalapenos and black olives. For serving, top with avocado and sour cream.
    • Buffalo chicken: Swap the pizza sauce for ¾ cup buffalo sauce and add diced chicken breast.
    • Margherita: Add fresh mozzarella and fresh basil leaves while serving.

    Storage

    Leftover pizza cups can be stored in the fridge for up to 4 days in an airtight container. To freeze, place in a ziploc bag or airtight container and freeze for up to 3 months. 

    There are a couple ways to reheat the pizza cups. You can air fry at 325 F for about 6 minutes OR microwave for 1.5 minutes. If you're reheating from frozen, air fry at 325F for about 10-12 minutes.

    Top Tip

    Don’t forget to bake the tortilla cups ahead of time, this helps the bottoms of the pizza cups from getting soggy!

    Frequently Asked Questions

    Can I use larger tortillas? 

    Yes you can! I recommend slicing the tortillas into 6 equal sized triangles to keep the cups from getting too big.

    Can I use marinara sauce? 

    Yes, however please note that this may result in the bottoms of the pizza cups getting soggy.

    How can I stop the pizza cups from getting soggy the next day?

    These shouldn't get soggy if you wait until they are fully cooled to store them. If they do get soggy I recommend placing them in the air fryer to crisp up!

    How can you make pizza cups into a full meal?

    They're already balanced on their own, but I would pair 2 (or however many you want) with some extra veggies or a side salad.
