    No Bake Chocolate Truffles

    Ready in less than 30 minutes, these no bake chocolate truffles are the simplest go-to dessert. High protein, gluten free and vegan, they're my top grab-and-go treat!

    If you're familiar with me or any of my recipes, you'll know that I love food BUT I prefer easy and quick recipes. And these date truffles are my special secret: they sound super fancy and delicate (thanks to the word truffle), they taste delicious, YET they're quick and easy. Did I mention no bake? For anyone who's not following, these truffles are going to be your go-to classy sweet treat to share (or not!), without all the hassle!

    Why You Need These Date Truffles

    Once you start making these, you're going to find yourself making them on rotation!

    1. Higher protein- I'm a firm believer that you don't need protein in EVERYTHING, however it's always nice to have balanced treat that keeps your blood sugar stable and happy.
    2. Grab and go- Your future self will thank you when you've got an easy and nourishing sweet snack ready in the fridge.
    3. No bake- These no cook chocolate truffles are for my college students living in dorm, or anyone who doesn't want to deal with the oven right now.

    Main Ingredients

    Date truffles ingredients, including peanut butter, dates, peppermint, and chocolate chips.
    • Dates- Not only do these add fibre, minerals and natural sweetness, medjool dates are sticky enough to help bind these date truffles together.
    • Boiling water- This is important to soften the dates so they blend smoothly. We also use some of the "date water" in the mixture.
    • Oat flour- Oat flour has recently become one of my go-to flours because it's affordable, higher in fibre, and easy to make at home. Just blitz your rolled or quick oats until they reach a flour-like consistency.
    • Creamy peanut butter- Packed with healthy fats and a bit of protein, the nuttiness paired with chocolate is everything.
    • Chocolate collagen or protein powder- These are what make this a protein truffle, however you can substitute with 4 tablespoon of cocoa powder and 1 teaspoon of maple syrup.
    • Melted chocolate- Truly, any chocolate lying around your house works, given that it melts nicely.
    • Toppings- Take your pick! I used walnuts and some candy canes to keep things festive.

    How To Make these Protein Truffles

    Step One: In a medium bowl add your dates and boiling water and set aside for 5 minutes (this step helps soften the dates to make them easier to blend).

    Step Two: In a food processor or high powered blender, add oat flour, peanut butter, chocolate collagen, your soaked dates and about ⅓- ½ a cup of the date water (the water you soaked the dates in) and blend until smooth (you may need to stir periodically). 

    Step Three: Roll the mixture into 12 equal sized balls and place in the freezer for 5 minutes (use this as an opportunity to melt your chocolate). 

    Step Four: After 5 minutes, roll the balls in your melted chocolate and sprinkle with crushed candy canes or chopped walnuts. 

    Step Five: Freeze until chocolate hardens and then store in an airtight container in the fridge!

    Frequently Asked Questions

    What protein powder or collagen do you use?

    What other toppings can you put?

    Anything your heart desires. I rolled them in walnuts and candy cane here, but you could switch up the nuts for crushed seeds, desiccated coconut, or sprinkles. For a classic chocolate truffle, you could do a light dusting of cocoa powder.

    Why are truffles called a truffle?

    It's actually not because they contain truffle- they just happen to (slightly) resemble the truffle mushroom!

    Ingredients 

    • 1 cup of pitted medjool dates about 12 dates
    • 1 cup of boiling water
    • 1 cup oat flour or almond flour
    • ½ cup creamy peanut butter
    • 4 scoops chocolate collagen or protein powder can substitute with 4 tablespoon of cocoa powder and 1 teaspoon maple syrup
    • 1 cup melted chocolate
    • Topping: ¼ cup crushed candy canes or chopped walnuts
