    Strawberry Fruit Popsicles with Greek Yogurt

    Strawberry Fruit Popsicles are the best healthy summer snack for when you need to cool down. Gluten-free, minimal ingredients and low sugar!

    Where I live in Canada, we're constantly going in and out of summer heatwaves. And you know what that means: lots of ice cream and popsicles. Now while you can definitely buy popsicles from the store, they are SO easy to make at home that I've been experimenting with different flavours.

    These strawberry fruit popsicles are the ones I keep coming back too, because they are the perfect balance of creamy, refreshing and just sweet enough. They are super easy to make, low in added sugar and are my favourite summer treat to stock the freezer.

    Why This Recipe Is Dietitian Approved

    1. Minimal ingredients. There are only 5 simple ingredients in these homemade popsicles.
    2. Low added sugar. These popsicles are naturally sweetened with fresh strawberries, so we only need a tiny bit of added sugar.
    3. Refreshing summer treat. The best way to cool down in the summer is with a frozen treat like popsicles- prove me wrong!

    Ingredients

    Birds eye of ingredients like strawberries, lemon, water, greek yogurt, honey and vanilla extract.

    Strawberries. Fresh strawberries are best for the most flavourful and sweet popsicles.

    Water. The base liquid of this popsicle recipe! If you prefer a creamier popsicle, you can substitute with milk.

    Lemon juice. For a little tartness that pairs perfectly with the sweetness from the popsicles 

    Greek yogurt. Vanilla greek yogurt helps add a creamy taste and texture that is still sweet enough for the perfect summer dessert.

    Honey. For natural sweetness. This really depends on personal preference and how sweet you like your popsicles. Some individuals find the strawberries alone are sweet enough.

    Vanilla extract. For flavour!

    Instructions

    Blending strawberries in a blender.
    1. In a high powered blender combine strawberries, lemon juice, vanilla extract, water and honey. Blend until smooth. Set aside.
    Pouring blended strawberries into a popsicle mold.
    1. To the popsicle mold, add dollops of greek yogurt on the inside of the cavities, using a spoon to stick the yogurt to the sides to create the “strawberries and cream” look. 
    2. Pour the strawberry mixture into the cavities of the popsicle mold. Divide the mixture evenly.

    1.  Top with popsicle sticks and place in the freezer to harden (usually at least 4 hours). 

    Substitutions and Variations

    To make gluten-free: this recipe is naturally gluten-free.

    To make dairy-free: swap the Greek yogurt for a dairy-free yogurt or omit it completely.

    To make nut-free: this recipe is naturally nut-free.

    Homemade popsicles are so fun to experiment with. Try these combos next:

    • Strawberry mango: use 1 cup strawberries and 1 cup mango in the base 
    • White chocolate strawberry: drizzle or dip with melted white chocolate 
    • Strawberry basil: add a few leaves of fresh basil into the strawberry blend (I recommend leaving the yogurt out of this one as it tastes best as an ice pop)

    • Popsicle molds
    • High-powered blender

    Storage

    Homemade popsicles can be stored in the freezer for up to 3 months. To remove, I recommend running under warm water to loosen them from the molds.

    Top Tips for Success

    Fruit popsicles are a great easy no bake summer treat. You can customize these in SO many ways:

    • Substitute half the strawberries with another fruit of choice 
    • Add a scoop of protein powder for a higher protein option 
    • Mix the yogurt directly in or use milk instead of water for a creamier popsicle 

    Frequently Asked Questions

    How do I remove my homemade popsicles from the mold?

    If they are sticking, I recommend running them under warm water. A silicone popsicle mold makes it super easy to remove!

    Can I blend the yogurt directly with the other ingredients?

    Yes of course! For a SUPER easy variation, just add the yogurt directly in with the strawberry mixture for a creamy popsicle.

    Can I leave the yogurt out of this recipe?

    Yes. This will create more of a traditional ice pop variation and is still a delicious summer treat.

    Ingredients 

    • 2 cups fresh strawberries green tops removed
    • Juice of ½ a lemon
    • 1 teaspoon vanilla extract
    • ½ cup water
    • 1 tablespoon honey optional

    Notes

    You can get as creative as you like with these. Some great add-ins include fresh basil, protein powder, mango, dipping in white chocolate or mixing the yogurt directly in with the strawberries for a creamier popsicle.
    I do not recommend substituing fresh strawberries with frozen!
    Water can be replaced with milk for a creamier popsicle.
    Honey is optional and will depend on how sweet your strawberries are and your personal taste preferences. I like a sweet popsicle, however some individuals find the strawberries enough.
