    Easy Vegan Caramel Slice

    A thick gooey salted caramel, layered on a gluten free shortbread crust, topped with chocolate and sea salt. These easy vegan caramel slice bars are about to be your new favourite treat when you're craving something sweet.

    DROP EVERYTHING. Your favourite candy can now be made at home with absolutely no oven required. If you grew up loving Twix bars as much as I did you are going to LOVE these. And the best part? they're 100% plant based.

    Made with only a handful of "better-for-you" ingredients, these raw vegan caramel slice bars are a winner. Not only are they no-bake, but they also take 30 minutes to prepare. Sweetened with dates and made using oat flour, these healthy caramel slice bars are lower sugar, have a little added fibre and can also be gluten-free!

    What Ingredients do I need for these vegan caramel slice bars?

    Shredded Coconut - I personally love coconut so I love the extra flavour and texture it brings these! However if you don't like coconut, don't worry just add more oat flour!

    Medjool Dates- for natural sweetness and a rich caramel flavour! Don't forget to remove the pits prior to blending. To make the dates a little easier to work with for these date caramel slice bars, try soaking them in warm water for about 30 minutes before starting the recipe.

    Oat flour- I love using oat flour in these for some added whole grains and fibre! It really helps make them the perfect snack and gives that long lasting energy I look for in a energy bar. To make my oat flour I just blend an equal amount of oats in a high powered blender or food processor. Note that I have not tested with any other flour, however almond flour *should* work!

    Peanut butter- The secret ingredient to a gooey caramel. I typically use natural peanut butter (look for one with the only ingredients being peanuts and salt). I just find I like how it tastes better! However almond butter will also work!

    Chocolate- I personally use semi-sweet or dark chocolate chips however any chocolate will work! To make these caramel slice bars vegan use plant-based or dairy-free chocolate like these!

    Storing Caramel Bars

    Since the caramel is so gooey these bars store best in the freezer! But don't worry the caramel stays soft so you won't break your teeth biting into them! They store well in the freezer for up to 1 month ( though I highly doubt they'll last that long)!

    Vegan Caramel Slice

    Servings: 8 bars

    Ingredients 

    Base:

    • 1 cup oat flour
    • ½ cup unsweetened shredded coconut
    • 4 tablespoon milk of choice
    • 4 medjool dates seeds removed

    Caramel Layer

    • 1 cup medjool dates seeds removed
    • ¼ cup peanut butter
    • 2 tablespoon water or milk
    • ¼ tsp salt
    • 1 teaspoon vanilla

    Chocolate Layer

    • 1 cup chocolate chips (use dairy free if vegan)
    • 1 tsp coconut oil

    Instructions

    • In a food processor or high powered blender, combine base ingredients until a cookie dough begins to form.
    • Press cookie dough into the bottom of a parchment lined rectangular loaf pan and set aside.
    • Taking out the food processor or high powered blender again, combine caramel layer ingredients and blend until smooth. Spread evenly over the top of the cookie layer combine caramel layer ingredients in a high powered blender
    • Freeze for 30 minutes.
    • Once 30 minutes is up, remove from freezer. Using a double boiler over medium heat, combine chocolate chips and coconut oil, stirring frequently until chocolate is evenly melted.
    • Pour chocolate over middle layer, top with flaky sea salt if desired and freeze for at least 4 hours (preferably overnight).
    • Once chocolate has hardened, slice into even squares and store in the freezer!
