What I Ate Focusing on Protein & Fiber

Published: Apr 28, 2024 by Nicole Addison · This post may contain affiliate links · Leave a Comment

    Hi everyone!

If you've been around here for a while you know I'm not normally a huge fan of "What I eat in a day videos" (or WIEAD) as I feel they can spark comparison, which can lead to triggering emotions especially for those who may be struggling with their relationship with food.

However as a registered dietitian, I also do see the value in providing food ideas as inspiration. Using videos such as "WIEAD" videos to showcase realistic, easy ideas for how to incorporate nutrition into your daily life with a focus on creating a balanced and satisfying plate.

I believe in nutrition by addition and focusing on looking for ways to ADD nutrients to your plate without sacrificing taste or enjoyment. My goal when it comes to creating and sharing my recipes is to help individuals nourish a healthier relationship with food in a way that fits with their lives. So today I decided to share a glimpse into ONE day of my life to show you nutrition doesn't need to be overly complicated (keep in mind I did know I was filming this day... my meals aren't always this thought out and aesthetic)!

Below you can find some of the recipes I highlighted in today's video as well as some helpful nutrition posts if you are looking for more inspiration and education- enjoy!

    Featured recipes:

    Breakfast

    Avocado Cottage Cheese Toast
Avocado Cottage Cheese Toast is a high protein spin on a classic. Enjoy for a balanced breakfast or lunch with 25g of protein.

+ Queen Street Bakery English muffin & strawberries!

    Snack #1

    Chocolate Greek Yogurt Fruit Dip
Indulge in this healthy Chocolate Greek Yogurt, delicious as a fruit dip or eaten on a spoon. With 10g of protein, this dip is amazing for balanced snacks!

+ strawberries, crushed graham crackers, sliced almonds & pumpkin seeds ( a GREAT source of fiber and protein)

+ whole wheat pita, chopped cucumber, bell peppers, hummus, sliced apple & a little chocolate (I always need a lil something sweet)

    Snack #2

I don't have this exact recipe as I just combined about ½ cup edamame + ½ cup sliced Persian cucumbers + this dressing + Everything But The Bagel seasoning

However it's fairly similar to this recipe if you wanted something to prep:

Viral Cucumber & Bell Pepper Salad (With Edamame)
Crunchy, colorful and a kick of spice! You won't be able to get enough of the viral cucumber pepper salad.

My secret is adding lentils into my ground meat whenever I can to help add additional fiber!

    Dessert:

I can't go to bed without something sweet... recently I have LOVED the Hu cashew butter stuffed chocolate bar!
