    Whipped Ricotta Cheese Toast

    This Whipped Ricotta Cheese Toast is an easy breakfast or snack with protein and delicious fresh flavours. So easy to make and very customizable!

    Cottage cheese has been the hottest food of 2025, but I know not everyone's a fan. While everyone's been enjoying cottage cheese toast (which I also love), I've been quietly obsessed with this whipped ricotta cheese toast. And now it's time to share it with you, now that I've perfected the recipe.

    If the curds in cottage cheese gross you out, ricotta is its creamy, dreamy counterpart. It's also relatively high in protein, with 14g per half cup. You might be more with ricotta in lasagna or pancakes, but it's so delicious as a spread on toast.

    In this post, I share how I make a batch of whipped ricotta, and my favorite toast combinations.

    Why This Recipe Is Dietitian Approved

    1. Easy meal or snack. Ricotta toast only takes a couple of minutes to make, so it's perfect when you need a quick meal or snack.
    2. Minimal ingredients. Whipped ricotta cheese sounds fancy, but it requires minimal ingredients and is so easy to make at home.
    3. Customizable. The flavor options are endless. I'll share my ideas below!

    Ingredients

    Ingredeints including ricotta cheese, olive oil, lemon, kale, spices.

    Ricotta cheese. Creamy and delicious with a mild flavor, ricotta is an underrated cheese. It also has 14g of protein per ½ cup, making it a great addition to recipes.

    Lemon. We use the juice and zest of ½ a lemon in this recipe.

    Spices. The only spices you need are salt, black pepper and garlic powder.

    Fresh herbs. I love adding fresh herbs like basil or dill to my whipped ricotta for a fresh flavour.

    Olive oil. To help the ricotta blend a bit easier, creating a smooth consistency! I also love the flavor of fresh olive oil with herbs, lemon and ricotta.

    Instructions

    Ricotta, lemon juice, fresh herbs and olive oil in a food processor.
    1. To a food processor add ricotta, lemon juice, lemon zest, salt, garlic powder, black pepper, fresh dill and olive oil.

    1. Blend on low for about 1 minutes before increasing the speed to high for 2 minutes. Blend until smooth and creamy. Taste and adjust seasonings to desired preference.

    1. For the toast, lightly brush each slice of bread with olive oil. Air fry at 400F for about 3 minutes (or until toasted and golden brown) or place in a hot pan over medium heat to brown.

    1. To assemble the toast, add about ½ cup of whipped ricotta to each slice of toast and  top with desired toppings.

    Substitutions and Variations

    To make gluten-free: the whipped ricotta is naturally gluten-free.

    To make dairy-free:  there are many “vegan” and “dairy free” whipped ricotta recipes that substitute tofu for the ricotta cheese! Unfortunately I haven’t yet tested this variation, but definitely give it a quick search.

    To make nut-free: this recipe is naturally nut-free.

    Here are some of my favorite toast combos with this whipped ricotta cheese:

    • Sweet berry toast: add lemon juice, lemon zest and 1-2 teaspoon of honey to the ricotta. Top with blueberries or strawberries, hemp hearts and slivered almonds 
    • Lemon basil toast: add lemon juice, lemon zest, 1 teaspoon of honey and fresh basil to the ricotta. Serve topped with additional chopped basil and lemon zest
    • Tomato toast: top whipped ricotta toast with blistered tomatoes cooked in olive oil, sun dried tomatoes, or freshly sliced tomatoes seasoned with salt and pepper. Finish with fresh basil and a drizzle of balsamic glaze.

    Storage

    If you are looking to prep this whipped ricotta in advance, you can store any leftovers in an airtight container in the fridge for up to 4 days. There may be some liquid separation after storage, so just mix it up with a spoon before adding to your toast. 

    Top Tips for Success

    Get creative with your herbs and spices! The only thing you REALLY need for whipped ricotta cheese is ricotta and a bit of oil. I love adding a touch of honey with the lemon for a sweeter variation, or even a few different herbs for a more savoury blend.

    Frequently Asked Questions

    Can I use full fat ricotta?

    Yes of course! Full fat ricotta will result in a creamier, thicker whipped ricotta.

    Can I use a blender?

    I would advise against using a blender. Blenders typically blend a bit too fast resulting in a thinner, more liquid consistency.

    Ingredients 

    • 1 cup part-skim ricotta cheese *see notes
    • 2 tablespoon lemon juice ½ a lemon
    • ½ teaspoon lemon zest
    • ½ teaspoon salt
    • ¼ teaspoon garlic powder
    • ¼ teaspoon black pepper
    • 1 tablespoon fresh dill or basil chopped (optional)
    • 1 teaspoon olive oil
    • 2 slices sourdough bread
    • ½ tablespoon olive oil for bread

    Smoked salmon toast toppings:

    • Smoked salmon
    • 1 tablespoon hemp hearts
    • Thinly sliced green onions
    • Arugula

    Cherry tomato and turkey toast toppings:

    • Deli turkey breast nitrite and nitrate free
    • cherry tomatoes halved
    • Spinach

    Instructions

    Notes

    Whole fat or traditional ricotta will result in a smoother, more creamy and “whipped” ricotta, however I typically like using part-skim to decrease the added fats. It still tastes just as amazing!
    *I have included the nutrition information for the whipped ricotta below. However, always remember a recipe is so much more than just nutritional content and these numbers do not need to dictate your food choices. Nutrition content will also change based on the toppings added. Please don't forget both your body and soul need nourishment!
