    Chocolate Dipped Strawberry Yogurt Pretzel Bites

    Sweet, salty and refreshingly fruity! These chocolate covered strawberry yogurt pretzels are like an ice cream sandwich in a bite.

    Does anyone have a nostalgic spot for yogurt covered pretzels? It was a classic school snack we all knew and loved, but I'm here to level it up for summer.

    Summer = berry season, and what better way to enjoy ripe strawberries than in these strawberry yogurt pretzel bites? This simple snack truly hits every part of my tastebuds: it's lightly sweet, balanced with a touch of salt, and creamy too. Straight from the freezer, it's seriously like the best bite-sized strawberry ice cream sandwich, but with real fruit!

    Summer desserts don't get easier than this.

    Why This Dietitian Loves This Recipe

    Let me explain why these strawberry yogurt pretzels are so good.

    1. No bake. If fall calls for warm fruit crisps, summer calls for light, no bake desserts.
    2. Higher protein. I'm not saying every dessert needs to be high protein, but it's always nice to have that extra boost for satiety!
    3. It's like a bite sized ice cream sandwich. Need I say less? Sometimes you just need a small bite of something sweet but don't feel like a whole ice cream sandwich.

    Ingredients

    Ingredients in bowls, including chocolate chips, yogurt, strawberries and pretzels.
    • Greek yogurt
    • Strawberries
    • Pretzels
    • Dark chocolate chips
    • Coconut oil
    • Crushed peanuts

    Instructions

    Add yogurt and strawberries to a bowl.

    Mixing strawberries and yogurt together.

    Mash until well combined. Feel free to keep some chunks or mash until smooth.

    On a parchment paper lined baking tray arrange 28 pretzels. Top each pretzel with about 1 tablespoon of yogurt berry mixture.

    Top each yogurt bite with an additional pretzel, creating a sandwich.  Freeze for at least 2 hours or until yogurt is fully frozen.

    Once frozen, place chocolate chips in a microwave safe bowl with coconut oil. Melt in the microwave in 30 second increments until chocolate is fully melted. Dip pretzel yogurt sandwiches in chocolate and sprinkle with crushed peanuts (if using).

    Store in the freezer until chocolate has set.

    Substitutions and Variations

    To make gluten-free: Use gluten-free pretzels.

    To make dairy-free: Use dairy-free yogurt and chocolate chips. To keep a similar protein content to the dairy version, I recommend opting for a higher protein dairy-free yogurt like Kite Hill Greek style yogurt or Siggi's!

    To make nut-free: Omit the peanuts.

    Missing an ingredient? Try these:

    • Strawberries: Replace with berries of choice
    • Plain Greek yogurt: I personally use plain as I like to minimize the amount of added sugar I use in my recipes, however feel free to use any yogurt flavour you would like- strawberry or vanilla will be amazing in this recipe! If you don't like the tang from plain yogurt, you can always try sweetening it yourself with a touch of honey or maple syrup.
    • Dark chocolate: Any chocolate can be used. White, semi-sweet and milk all work!

    Storage

    To keep the yogurt from melting, these strawberry yogurt pretzels are stored best in an airtight container in the freezer for up to 3 months.

    Top Tip

    For best results, I suggest working quickly or in batches when dipping the pretzels in chocolate. If left out of the freezer for a prolonged time, the yogurt will begin to melt. This makes it quite difficult to dip the bites in chocolate. 

    Frequently Asked Questions

    Are these strawberry yogurt pretzels hard to bite into?

    They are slightly on the harder side as there has been no fat added to the yogurt. If you would like to soften up the bites, just leave them on the counter for 1-5 minutes and the yogurt will soften. 
    Another option is mixing in some peanut butter or cream cheese into the yogurt mixture to help increase the fat content, creating a less icy texture.

    Can I use frozen berries?

    Yes! That is what I chose to use. Fresh berries are great, but they can often be quite expensive if they are not in season. If you choose to use frozen berries, simply allow them to defrost (or microwave them for about 45 seconds) prior to adding them to the yogurt.

    Do I need to dip these in chocolate?

    No, of course not! If you prefer to leave them without the chocolate, that is completely fine.

    Can I take these strawberry yogurt pretzels on the go?

    Unfortunately as these need to be chilled in the freezer, I do not recommend bringing them around with you. Things can get quite messy!
