Sweet, salty and refreshingly fruity! These chocolate covered strawberry yogurt pretzels are like an ice cream sandwich in a bite.

Ingredients
1cupGreek yogurtI prefer plain but any flavour will work
1cupstrawberriesdiced
48pretzels
2cupsdark chocolate chips
1tablespooncoconut oilfor melting chocolate
¼cupcrushed peanutsfor topping, optional
Instructions
In a bowl. mash together yogurt and strawberries
On a parchment paper lined baking tray. arrange 28 pretzels. Top each pretzel with about 1 tablespoon of yogurt berry mixture.
Top each yogurt bite with an additional pretzel, creating a sandwich. Freeze for at least 2 hours, or until yogurt is fully frozen.
Once frozen, place chocolate chips in a microwave safe bowl with coconut oil. Melt in the microwave in 30 second increments until chocolate is fully melted. Dip pretzel yogurt sandwiches in chocolate and sprinkle with crushed peanuts (if using). Store in the freezer until chocolate has set.
