    Super Easy Chunky Monkey Greek Yogurt Bark

    The BEST chunky monkey Greek yogurt bark. A protein packed Greek yogurt-peanut butter base, naturally sweetened with a touch of honey, swirled with dark chocolate and topped with bananas and graham crackers.... YUM!

    All you need SIX ingredients to make the best yogurt bark you will ever have. Seriously I'm not kidding it's so good I almost ate the entire batch in one go. This bark is perfect. Not only does it have a protein boost and healthy fats (two things I ALWAYS look for in my snacks) but it also tastes AMAZING. Picture your favourite chocolate peanut butter ice cream with a subtle crunch and sweet banana flavour. It is seriously incredible and it better be because it took A LOT to get here (read my journey to getting the perfect bark below).

    If you aren't convinced yet... this is me telling you that you NEED to go run to your kitchen and make this ASAP. I will be snacking on it all summer long.

    What makes this Greek yogurt bark the best?

    This recipe was a LONG time coming. I've made Greek yogurt bark a few time before. The concept of it was amazing. Who wouldn't want an easy to make, healthy, high protein treat that you can just keep in the freezer? But every time I've tried to make it I was never super happy with it. I tried different fat percentages of the yogurts, I tried different toppings but nothing worked.

    I knew the problem was the fact that Greek yogurt becomes too solid when frozen. This meant that no matter what toppings I put on it it was always going to turn out tasting like a leveled up ice cube.... pretty bland, very hard and not very tasty lol.

    So I gave up on Greek yogurt bark, writing it off as something that sounds cool but doesn't work. That is until the other day inspiration struck. I thought to myself... what if I added another healthy ingredient to the yogurt to make it softer and tastier? Cue the peanut butter.

    By adding peanut butter the fat content of the bark increases, so instead of it completely freezing through you get a bark that still sticks together but is still soft enough to bite into without a trip to the dentist.

    What Ingredients do I need for this chunky monkey Greek yogurt bark?

    Yogurt- I use plain Greek yogurt for my yogurt bark and then sweet it up with a little honey. You can also choose to use vanilla Greek yogurt here and just not add the honey if you want! In terms of the yogurt any fat percentage will work. I personally use 2% because that's what we have one hand most often but as I said any will work. Note that I have NOT tested this with any other yogurt... I assume it would work but let me know if you try it!

    Peanut Butter- As with almost all of my recipes we're going alll natural with our peanut butter. I personally like natural peanut butter because it has only two ingredients: peanuts and salt. If you need a recommendation this Kraft natural peanut butter is always my go-to for a cheaper option or this Fatso peanut butter is SO good (but it is pricier). This way I can customize how sweet I want to make a recipe by adding my own sweetness. If you don't have natural peanut butter on hand don't worry any peanut butter will work just fine!

    Honey- For a touch of natural sweetness (especially important if you are using plain yogurt)!! There's just something about honey mixed with peanut butter and banana that just works.

    Banana- Optional but highly recommended. Not only does it make your bark look fancy it also tastes amazing.

    Chocolate- I use dark chocolate or semi sweet chocolate chips and just melt it with a little coconut oil however any chocolate will work! To get the prettiest swirls in your bark just use a spoon to drop dollops onto the yogurt mixture and then swirl it around with a toothpick.

    Graham Crackers- I have an obsession with graham crackers. I have no idea why and no idea what started it but I am admitting that I am a graham cracker-oholic. I will add graham crackers to whatever recipe I can because I just think they are the perfect little sweet crunch addition. This is completely optional but it adds texture, and makes your bark look ~fancy~.

    Chunky Monkey Greek Yogurt Bark

    A protein packed Greek yogurt-peanut butter base, naturally sweetened with a touch of honey, swirled with dark chocolate and topped with bananas and graham crackers

    Ingredients 

    • 1+ ¼ cup plain Greek yogurt any fat percentage will work
    • 1 tablespoon honey
    • ½ cup natural peanut butter
    • ⅓ cup dark chocolate melted
    • 1 medium banana sliced
    • ¼ cup crushed graham crackers

    Instructions

    • Line a baking sheet with parchment paper and set aside.
    • In a medium sized bowl, combine Greek yogurt, honey and peanut butter and mix thoroughly until combined.
    • Transfer the yogurt mixture onto the prepared baking sheet, using a spatula to spread and smooth it out until it reaches an even thickness.
    • Melt your chocolate. Add dollops of the melted chocolate on top of the yogurt mixture and swirl it around using a toothpick.
    • Top with bananas, graham cracker crumbs and a peanut butter drizzle (optional)!
    • Freeze for 3-4 hours or until firm (I typically leave it overnight).
    • Once firm, break the bark into pieces and store in a container in the freezer.

    Notes

    *as it is frozen this bark MUST be kept in the freezer. As much as I wish I could bring it with me anywhere I go sadly it will melt so it's a treat best enjoyed at home.

      I haven’t made this yet, but I’m wondering if substituting Sunbutter, made from sunflower seeds, would work instead of peanut butter. Then you won’t have to worry about serving this delicious treat to anyone with nut or peanut allergies!
