    Sweet Potato Toast (5 Ways)

    Sweet potato toast is a yummy gluten-free breakfast idea to load up with your favourite toppings. I'm sharing 5 healthy variations to start your day off right.

    Toast is one of my favourite meals. Breakfast, lunch, postworkout snack... what can't toast do?!

    Unfortunately, the gluten-free girlies probably disagree with me. And to that I say, I'm sorry. It is truly unfortunate that your bread options are tinier, break easily and are more expensive. Luckily, I have just the solution: sweet potato toast!

    Okay, maybe sweet potatoes aren't exactly the same as bread. But they're such a cute and delicious way to switch up my breakfast rotation. With a subtley sweet flavour, sweet potatoes are a great vessel for all your favourite toppings: avocado, cottage cheese, fruit and more.

    I've rounded up my top tips for success and 5 delicious sweet potato toast variations. I can't wait to see what other topping ideas you come up with too!

    Why This Recipe Is Dietitian Approved

    1. Nutrient dense. Sweet potatoes are a source of fibre and vitamin A, the nutrient that supports eye health and immunity. All thanks to its bright orange colour!
    2. Gluten-free. I love potatoes are a gluten-free carbohydrate for those with Celiac disease.
    3. Versatile. Switch up the toppings and you can enjoy these sweet potato toasts for any meal or even snacks. The sky is the limit when it comes to this highly customizable recipe.

    Ingredients

    Ingredients including sweet potatoes and oil.

    Sweet potatoes. Look for sweet potatoes that are medium in size, as symmetrical as possible, and wide. This will help create the largest area for your toast so you can load it up with toppings.

    Oil. I like using olive oil or avocado oil, but any neutral cooking oil of choice will work!

    Toppings. This is truly up to you. I've listed some of my favourite combinations below.

    Instructions

    Preheat the oven to 400F and line a large baking tray with parchment paper.

    Slicing sweet potatoes into toast shapes.

    Use a sharp knife or mandolin to slice off the ends of the sweet potatoes and discard.  Then, the sweet potato lengthwise down the middle. Carefully make about 5 slices about ¼” thick.

    Arrange the sweet potato slices in a single layer on your baking tray. Lightly brush each side of the sweet potato slices with olive oil.

    Bake in the oven for 15-20 minutes, until they are able to be pierced with a fork but are not too soft! For my air fryer method: bake at 390F for 11 minutes, flipping halfway. Ensure you do not overcrowd your air fryer basket.

    Allow to cool and top with your desired toppings. I've listed some combinations below!

    Substitutions and Variations

    To make gluten-free: This recipe is naturally gluten-free.

    To make dairy-free/vegan: This recipe is naturally dairy-free and vegan if you use vegan toppings.

    To make nut-free: This recipe is naturally nut-free.

    I have listed 5 of my favourite toast combinations in the recipe card, but as always, you be the artist of your own toast creations! Here are some more bonus ideas to inspire you:

    • Ricotta cheese + lemon zest + berries 
    • Cream cheese + strawberries + graham cracker crumbs
    • Pesto eggs
    • Chia jam and peanut btuter

    Equipment

    • Air fryer (optional)
    • Baking sheet
    • Mandolin (optional)
    • Sharp knife

    Storage

    There are a couple of ways to store sweet potato toast (without toppings).

    For fridge storage, place the sweet potato slices in an airtight container in the fridge for up to 7 days. 

    To freeze, allow the sweet potato slices to cool fully. Once cool, layer the sliced with parchment paper and place in an airtight container or bag. Freeze for up to 3 months. 

    To reheat from frozen:

    • Toaster: about 8 minutes (or until warm, this will depend on your toaster) 
    • Air fryer: 350F for 7 minutes, flipping halfway 

    To reheat from the fridge:

    • Toaster: about 2 minutes (this will depend on your toaster)!
    • Microwave: about 30 seconds 
    • Air fryer: 325 F for about 3 minutes, flipping halfway 

    Top Tips for Success

    • Size matters! Ensure your sweet potatoes are fairly symmetrical and as large as possible. This will help create the largest sized toasts. Narrow potatoes will make sweet potato toasts that are too thin and likely will not fit in your toaster. If your sweet potatoes are too large, you can slice the toasts in half width-wise before baking.
    • For the most toasted sweet potato toast, use the air fryer method listed below.
    • If you are having trouble slicing your sweet potatoes, you can gently pierce it with a fork in the microwave for about 1 minute to soften the skin. This makes it easier to cut.
    • For the safest cutting, I recommend slicing off a thin portion of the sweet potato on one side to create a flat base. This will create a stable base to slice the potato. Don't forget to ensure your knife is sharp. A mandolin will also work- just watch your fingers.

    What are some other ways to use sweet potato toast?

    I love meal prepping these toasts and keeping them in the fridge or freezer for easy meals! If I don’t eat them as toasts with toppings, I will slice them up and add to them bowls, salads, sheet pan meals or even use them in my sweet potato nacho recipe!

    Why sweet potato toast vs regular bread?

    I have absolutely nothing against regular toast! This is a great gluten-free option or way to switch up your usual routine.

    Is sweet potato toast low carb?

    Sweet potatoes are a great source of complex carbohydrates. The amount of carbs per slice will depend on the size of the sweet potato toast.

    Ingredients 

    • 2 large sweet potatoes washed and dried
    • 1 tablespoon olive oil

    Peanut butter + banana sweet potato toast:

    • 1 tablespoon peanut butter
    • ½ banana
    • Drizzle of honey

    Mediterranean cottage cheese sweet potato toast:

    • ¼ cup cottage cheese
    • Mediterranean cucumber salad link

    Hard boiled egg and avocado sweet potato toast:

    • ½ avocado mashed
    • 1 hard boiled egg
    • Everything but the bagel seasoning

    Feta egg and spinach sweet potato toast:

    • 1 cup spinach sauteed
    • 1 fried egg with salt and black pepper
    • 1 tablespoon feta cheese

    Yogurt and berries sweet potato toast:

    • ¼ cup plain or vanilla Greek yogurt
    • ¼ cup berries of choice
    • 1 tablespoon sliced almonds
    • 1 tablespoon seeds of choice hemp, chia, flax

    Instructions

    Notes

    You can peel the skin or leave the skin on, I personally prefer to leave the skin on the sweet potato for a ‘crust’.
    For the safest cutting, slice off a thin portion of the sweet potato on one side to create a flat base. This will make it easier and safer to cut. It is also important to ensure your knife is sharp!
