Ingredients
2large sweet potatoeswashed and dried
1tablespoonolive oil
Peanut butter + banana sweet potato toast:
1tablespoonpeanut butter
½banana
Drizzle of honey
Mediterranean cottage cheese sweet potato toast:
¼cupcottage cheese
Mediterranean cucumber saladlink
Hard boiled egg and avocado sweet potato toast:
½avocadomashed
1hard boiled egg
Everything but the bagel seasoning
Feta egg and spinach sweet potato toast:
1cupspinachsauteed
1fried egg with salt and black pepper
1tablespoonfeta cheese
Yogurt and berries sweet potato toast:
¼cupplain or vanilla Greek yogurt
¼cupberries of choice
1tablespoonsliced almonds
1tablespoonseeds of choicehemp, chia, flax
Instructions
Preheat the oven to 400F and line a large baking tray with parchment paper.
Use a sharp knife or mandolin to slice off the ends of the sweet potatoes and discard. Then, the sweet potato lengthwise down the middle. Carefully make about 5 slices about ¼” thick.
Arrange the sweet potato slices in a single layer on your baking tray. Lightly brush each side of the sweet potato slices with olive oil. Bake in the oven for 15-20 minutes, until they are able to be pierced with a fork but are not too soft! (air fryer method: bake at 390F for 11 minutes, flipping halfway* ensure you do not overcrowd your air fryer basket!).
Allow to cool and top with your desired toppings

You can peel the skin or leave the skin on, I personally prefer to leave the skin on the sweet potato for a ‘crust’.For the safest cutting, slice off a thin portion of the sweet potato on one side to create a flat base. This will make it easier and safer to cut. It is also important to ensure your knife is sharp!*I have included an estimation of the nutrition information for 2 toasts (without toppings) below.
