This avocado green goddess dressing is creamy, dreamy, and heart healthy. Made with fresh herbs, lemon and olive oil, it quickly livens up any salad or sandwich.

Ingredients
1avocado
1shallotdiced
Juice of 1 lemon
⅓cupfresh herbs *see note below
2tablespoonplain Greek yogurt
1clovegarlicminced
2tablespoonrice vinegar
½teaspoonsalt
¾cupspinach
1teaspoondijon
⅓cupextra virgin olive oil
Water to thin *see notes below
Instructions
In a high powered blender, combine all ingredients and blend until smooth. Add water to thin as desired.
Pour over your favorite salad or store in an airtight jar and store in the fridge.
Notes
Fresh herbs: green goddess dressing gets its name from being a blend of fresh herbs. Feel free to use any fresh herbs of choice. Some great options include basil, parsley, dill, cilantro and chives. I recommend selecting about 2 of your favourites (I love parsley and dill), the taste will vary slightly depending on which blend you decide to use.Water: This is a thick and creamy dressing, if you would like a thinner dressing you may add some water to thin. I recommend adding 1-2 tablespoon at a time, blending and reassessing until your desired thickness is reached!For an easy green goddess salad:combine 1.2 bag of coleslaw mix of choice + 1 diced cucumber + 3 large handfuls of finely chopped kale*I have included an estimation of the nutrition information for this recipe below.
