My ultra cheesy Broccoli Bites are a tasty savory snack, with veggies in every bite. Gluten-free and made with nourishing ingredients!

Ingredients
2cupssteamed broccolidrained or excess water
2eggs
½cupflax seedground *see below for substitution
½cupnutritional yeast *see below for substitution
½teaspoongarlic powder
½teaspoonsalt
½teaspoonblack pepper
½teaspoononion powder
½teaspoonpaprika
½cupdiced shallot(about 1 shallot)
1.5cupsshredded cheesedivided ( i like doing a mix of parmesan and cheddar)
Instructions
Preheat oven to 375F and line a large baking tray with parchment paper.
In a food processor combine, cooked broccoli (I recommend squeezing out excess water using a cheesecloth or paper towel), eggs, ground flax seed, nutritional yeast, garlic powder, salt, pepper, onion powder paprika, shallot and 1 +¼ cup of shredded cheese. Blend until smooth.
Drop the batter by heaping tablespoons onto the prepared baking sheet. The batter will be sticky, but should easily hold their shape when dropped on the baking sheet.
Bake for about 20-25 minutes, flipping halfway. In the final 5 minutes of baking, sprinkle tops of the broccoli bites with shredded cheese.
Allow to cool before enjoying! I recommend pairing with my Greek yogurt dill dip!
Notes
Both ground flax and nutritional yeast can be replaced with an equal amount of almond flour, oat flour or breadcrumbs (ie. if you would like to replace just the flax seed or almond flour substitute with ½ cup of one of the options above. If you would like to replace both flaxseed and nutritional yeast substitute with 1 cup total of the options above).If you are substituting the nutritional yeast I recommend adding about ¼ cup of grated parmesan cheese for additional flavour.Frozen Broccoli can be used, just ensure it is defrosted first.If you're noticing the batter is too sticky and wet, this may just mean the broccoli added too much extra moisture.
