Ingredients
1.5cupsoatsrolled, quick or minute
¼cupnut butter of choice peanut, cashew, almond butter, etc.
¼cuphoney
½cupnuts or seeds of choicecrushed walnuts, sliced almonds, hemp seeds, flax seed, etc.
2teaspooncinnamon
½of 1 mediumbananamashed
1teaspoonvanilla extract
Salt to taste
For white chocolate drizzle:
1teaspooncinnamon
1ouncebakers white chocolate
½teaspooncoconut oil
Instructions
Preheat oven to 300 F.
In a large bowl, combine the oats, nuts, nut butter, honey, cinnamon, mashed banana, vanilla extract, and salt
Evenly spread and press the granola onto a prepared baking sheet in one large piece (it should easily stick together). You can press it down until it’s about ¼ inch thick. If using:Sprinkle half of the additional cinnamon over the top of the granola before putting it in the oven.
Bake granola for 30-35 minutes or until the edges start to brown. Remove from oven and allow to cool for at least one hour to allow the granola to harden.
To melt white chocolate, combine white chocolate and coconut oil in a microwave safe bowl and microwave in increments of 30 seconds until fully melted.
After the granola has cooled, drizzle with melted white chocolate and place in the freezer until the chocolate has set (about 10 minutes). Break the granola into pieces (I like bigger chunks) and enjoy!
Notes
For best results, store this granola in an airtight container in the fridge.Substiutions!
the banana can be replaced with an adidtional ¼ cup each of both honey and peanut butter
If you find your mix to be too sticky, I recommend adding additional oats or nuts/ seeds. The mixture should be sticky enough to stick together but shouldn't be so wet that it's impossible to spread!*I have included an estimation of the nutrition information for this recipe below.
