½cupplain greek yogurt
1tablespoonwhite vinegar
1tablespoonolive oil
1teaspoonsalt
¼teaspoonblack pepper
2tablespoonfresh dillfinely chopped
1tablespoonhoney
6persian cucumbersthinly sliced (I like using a mandolin)
½red onionthinly sliced
1avocadodiced
Instructions
In a large serving bowl, whisk together greek yogurt, vinegar, olive oil, salt, black pepper, dill and honey.
To the bowl, add cucumbers, red onion and avocado. Toss to combine.
