Ingredients
1 540mLcan chickpeasrinsed and drained
1 540mLcan white navy beansrinsed and drained
2shallotsdiced
1cupmini bocconcinisliced in half
2cupscherry tomatoeshalved
2red bell peppersdiced
2cupsflat leaf parsleychopped
¼cupcanned artichokeschopped
¼cupsundried tomatoesthinly sliced
¼cupsliced kalamata olives
¼cuphemp seeds
200gnitrate free turkey breastchopped (optional)
Dressing:
⅓cupolive oil
¼cupapple cider vinegar
2tablespoondijon mustard
1teaspoonsalt
½teaspoonblack pepper
½teaspoongarlic powder
2teaspoonoregano
1teaspoonhoneyoptional for sweetness
Instructions
In a large mixing bowl combine chickpeas, white beans, shallots, cherry tomatoes, bocconcini, bell peppers, parsley, artichokes, sun dried tomatoes , olive, hemp seeds and turkey breast if using.
To make the dressing in a mason jar or small bowl whisk together oil, vinegar, salt, black pepper, garlic powder, oregano and honey if using. Adjust seasoning to desired taste.
Pour dressing over the salad.
