High in protein, healthy fats, and easy to make, my favourite edamame guacamole is going to be your new go-to dip. It goes on EVERYTHING!

Ingredients
3medium ripe avocados
Juice of 1 limeabout 2 tbsp
1cupfrozen shelled edamamethawed
½cuptomatodiced
¼cupred oniondiced
1large jalapenoabout 3 tbsp, seeded and finely diced
¼teaspoonground cumin
¼teaspoonchili powder
¼cupcilantrofinely chopped
Salt and black pepper- to taste
Instructions
Cut the avocados in half. Remove the pit. Scrape the inside of the avocado with a knife and scoop out the flesh with a spoon.
In a high powered blender or food processor add half of the avocado along with the lime juice and edamame beans. Pulse until a paste forms (about 1-2 minutes)- you just want to break down the edamame beans so you don’t have large chunks!
In a mortar and pestle (or in a bowl with a fork) mash the remaining avocado. Add the edamame/avocado paste and mix. Add in the remaining ingredients and adjust spices to taste.
Serve immediately with your favourite chips, crackers or veggies!
Notes
If you wish to store this I recommend storing it in an airtight container OR a bowl and covering it tightly with plastic wrap. To avoid oxidation (browning of the avocado) try to press the plastic wrap against the surface of the dip. Use a spoon to flatten the surface of the dip and remove any air bubbles!*I have included an estimation of the nutrition information for this recipe below.
