Fruit Cocktail Salad is a refreshing dessert to beat the summer heat. Full of color, micronutrients and hydrating fruit!

Ingredients
1 540mlcan fruit cocktailstored in water, drained
4kiwisdiced
1cupstrawberriesdiced
1cupblueberries
1medium applediced
1medium peachdiced
1mangopeeled and diced
3mandarin orangespeeled
⅓cup100% orange juice
Juice of 1 lemon
Zest of 1 lemon
⅛teaspoonsalt
Optional:
1-2tablespoonhoney
¼cupfresh mintfinely chopped
1teaspoonvanilla extract
Instructions
In a large bowl, add a drained fruit cocktail. Top with additional diced fruits including kiwi, strawberries, blueberries, apple, peach, mandarins and mango.
Top with lemon juice, lemon zest and salt. If you are using it you may also add the honey, fresh mint and vanilla extract here.
Toss to combine. Serve fresh or store in an airtight container in the fridge for up to 3-5 days.
Notes
For minimal prep, I recommend using a produce chopped to create even sized diced fruit.Fruit choices can be customized based on your desired preference, I recommend aiming for a total of 6 cups of additional fruit (aside from the fruit cocktail).I do not recommend adding bananas to this salad as I find they don’t hold together as well as some other fruit options and will decrease the freshness of this salad.You can leave the skin on the kiwi for additional fiber.*I have included an estimation of the nutrition information for this recipe below.
