My Healthy Lemon Drizzle Muffins are zesty, citrusy and higher in fibre and protein than a traditional muffin. Gluten-free and only 15 minutes of prep.

Ingredients
1 ¾cupoat flour
1teaspoonbaking powder
½teaspoonbaking soda
½teaspoonsalt
2.5tablespoonchia seeds
¼teaspoonground turmeric
⅓cupolive oil
½cuphoney
2eggs
¼cuplemon juicejuice of 1.5 lemons
2teaspoonlemon zestzest of 1.5 lemons
1teaspoonvanilla extract
1cupplain 2% Greek yogurt
For the drizzle:
2tablespoonlemon juicejuice of ½ lemon
⅓cuppowdered sugar
Instructions
Preheat the oven to 400F. Line or grease a 12- cavity muffin tin.
In a medium icing bowl, whisk together oat flour, baking powder, baking soda, salt, chia seeds and turmeric. Set aside.
In a separate large mixing bowl, whisk together olive oil and honey until smooth. Add eggs, lemon juice, lemon zest and vanilla extract, whisk. Add Greek yogurt and whisk until smooth.
Combine dry and wet ingredients, by adding dry ingredients to the wet ingredient bowl. Stir to combine using a spatula or wooden spoon.
Divide the batter between 12 muffin cavities (about 3 tablespoon of batter per cavity).
Bake for about 16-18 minutes or until a toothpick inserted into the center of the muffin comes out clean.
Once cool, drizzle with lemon drizzle.
To make the lemon drizzle:
Whisk together lemon juice and powdered sugar.
Notes
To make your own oat flour add 2 cups of whole oats to a high powered blender or food processor and blend for about 5 minutes, until flour-like consistency forms.Ingredient swaps:
Oat flour → whole wheat pastry flour
Honey → ½ cup maple syrup
Olive oil → ½ cup melted and cooled coconut oil or melted butter
