Enjoy an alcohol-free summer drink with my healthy pina colada mocktail. It's lower in sugar and packed with vitamin C, electrolytes and enzymes to aid digestion and keep you hydrated.

Ingredients
For garnish:
¼cupunsweetened shredded coconut
2lime wedges
2slicesof pineapple
For pina colada:
1cuplight coconut milk(shake the can prior to adding)
1.5tablespoonlime juicejuice of about 1 lime
2cupsfrozen pineapple
¾cupice
½cupnon alcoholic rum if desired
1tablespoonhoneyoptional for added sweetness
Instructions
For garnish:
Spread coconut in an even layer on a baking tray and broil at 500F for about 4 minutes, or until golden brown and add to a small shallow plate.
Use a wedge of fresh lime juice and run it around the rim of each glass to moisten it.
Dip the wet edge of the cocktail glass into the plate of coconut.
For pina colada:
In a large blender combine all ingredients. Blend until smooth. Pour into 2 garnished glasses.
