This Slow Cooker Stuffed Pepper Soup is the coziest dinner that's high protein and nutrients. Gluten-free, dairy-free and great for meal prep.

Ingredients
1lbextra lean ground beefor turkey cooked and drained
½yellow oniondiced (about ½ cup)
1green bell pepperdiced
1red bell pepperdiced
14ozcan diced tomatoeswith juices, about 1.75 cup
3cupslow sodium beef broth
1+¾ cups tomato sauce
2teaspoondried oregano
1.5teaspoongarlic powder
Salt and black pepperto taste
1tablespoonworcestershire sauce
3cupsriced cauliflowercan be frozen
540mLcan lentilsrinsed and drained
Shredded cheddar cheeseoptional for topping
Instructions
In a 6 quart slow cooker, add cooked ground beef, diced yellow onion, green pepper, red pepper, diced tomatoes (and their juices), beef broth, tomato sauce, oregano, garlic powder, salt and pepper (to taste), worcestershire, riced cauliflower and lentils.
Cover and place on HIGH for 3-4 hours or LOW for 6-8 hours.
After the soup has cooked and the vegetables are tender. Adjust spices to desired taste. Serve and top with shredded cheese (optional).
Notes
If you wish to add rice for a more traditional stuffed pepper soup, I recommend cooking the rice separately and pouring the soup over the rice when serving.Ground turkey can replace ground beef if preferred.
