My McGriddle Muffins are a delicious breakfast made with sausage, maple, and pancake mix. A more nutritious version of your McDonalds order!

Ingredients
1lbturkey breakfast sausages
1.5cupsmilk
3tablespoonmaple syrup
2eggs
2cups+ 2 tablespoon protein pancake mixUse a just add water mix!
½cupcheddar cheeseshredded (optional)
Instructions
Preheat the oven to 400F and prepare a 12-cavity muffin tin.
In a large pan over medium-high heat cook the turkey sausages until browned and fully cooked. Once cooked, allow to cool and chop into bite sized pieces.
To a large mixing bowl, whisk together milk, maple syrup and eggs.
Slowly stir in the protein pancake mix.
Once smooth, stir in cooked sausage pieces and shredded cheese if using.
To a muffin tray, add about ¼ cup of batter into each cavity ( I use a large cookie scoop). Divide any excess batter amongst the cavities. Bake for about 25 minutes, or until fully cooked and a toothpick inserted into the center of the muffins will come out clean.
Notes
These muffins are best eaten warm with a little maple syrup.Don't have protein pancake mix? Substiute 1 ¼ cups of all purpose flour + ½ cup unflavoured protein powder*I have included the nutrition information for this recipe below. Please note that the calculations are done with Flourish protein pancake mix, however you can use any pancake mix you like!
