Ingredients
4cupspurple cabbageshredded (about ½ of one head)
2cupsedamameshelled
1red bell pepperdiced
1yellow bell pepperdiced
2cupscarrotsshredded
1english cucumberdiced
1bunch green onionsfinely chopped
1cupcashewschopped
½cupcilantrochopped
Tahini dressing:
¼cuptahini
2tablespoonfresh ginger
3tablespoonsesame oil
3tablespoonrice vinegar
2tablespoonsoy sauce
2teaspoonhoney
Water to thinabout 1-2 tbsp
Instructions
In a large bowl, combine cabbage, edamame, red and yellow bell peppers, shredded carrots and diced cucumber.
Top with green onions, chopped cashews and cilantro.
To make the dressing, in a medium bowl, whisk all ingredients together .
Drizzle the dressing over the salad and toss to combine.
