Ingredients
200grice noodles
1.5tablespoonred curry paste
3tablespoonsoy sauce
1.5cupschicken broth
3tablespoonrice vinegar
1teaspoonsriracha sauce
½ cuppeanut butter
1tablespoonhoney
1tablespoonolive or sesame oil
1teaspoongarlicminced
1teaspoongrated ginger
1lbground chicken
2cupcoleslaw mix
2large handfuls of spinach
For serving:
Chopped cilantro leaves
Chopped peanuts
Sliced green onions
Chili crunch
juice of 1 fresh lime
Instructions
Add rice noodles to a large bowl and cover with warm water. After 5 minutes gently separate the noodles with a fork and drain.
Whisk together red curry paste, soy sauce, chicken broth, rice vinegar, sriracha, peanut butter, and honey to make your peanut sauce.
In a large skillet over medium- high heat, add oil. Once hot, add ground chicken and cook until it is no longer pink. Add garlic & ginger and cook until fragrant (about 1 min). Add the coleslaw mix and allow to cook until they begin to soften (about 3 minutes).
Add noodles to the pan with the meat and vegetables. Pour the sauce over everything and mix together. Add spinach and cover. Allow to simmer for about 3-5 minutes, until the sauce is warm and the spinach has wilted.
Serve with chopped peanuts, cilantro, green onions and chili crunch. Drizzle with lime juice if desired.
