Ingredients
For the salad:
6mini cucumberssliced, about 4 cups
12mini pepperssliced and deseeded, about 2.5 cups
2cupsedamame beans
2green onionssliced thinly
2tablespoonsesame seeds
¼cupfeta cheesecrumbled
1teaspoonchili crunchoptional
For the dressing:
⅓cupolive oil
1tablespoonsesame oil
2tablespoonrice vinegar
1teaspoonfresh ginger
3tablespoonsoy sauce
1tablespoonhoney
Instructions
In a large bowl add mini cucumber sliced, pepper sliced, edamame beans and green onions. Top with sesame seeds, feta cheese and chili crunch.
In a mason jar combine dressing ingredients and shake until fully combined.
Pour the dressing over the salad and toss to combine.
